I got this quesadillas recipe from my Facebook friend Thapelo who has exceptional culinary skills and had to try it. I made them for my son now regret it because he wants them every day.
According to Wikipedia, a quesadilla is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, and spices, and then cooked on a griddle. I chose to make mine in the oven.
Simple Quesadillas South-African Style
- 2 Rotis (flat bread)
- Cheddar Cheese Grated
- 2 Vienna Sausages
- Cooked pork or chicken chunks
- Onion rings
- Green pepper slices
- 2 tbsp ketchup
- Method :Heat your oven at 180 degrees and grease your baking tray with cooking spray or oil. I used a round baking tray but any that you have will do. I get my roti and sweet-sour chilies at Gorima's spice emporiums. There is no way I could make roti myself at home, it is just a bit too messy for my liking. I try to keep my recipes as simple as possible. I never knew I could use roti for these.
- Place 1 roti at the bottom of the tray and base with tomato sauce and chilies for a bit of heat. Add the vienna sausages, cooked meat, mushrooms, green pepper, onion rings, top it off with grated cheddar cheese, and lay the second roti over all the toppings like a sandwich. Bake for 15 minutes or until the cheese melts. Let it cool, cut into even slices, and enjoy while still warm.
